Maison Riviera's Poutine
Preparation : 1 hour
Servings : 2 large servings or 4 small servings
Ingredients :
4 potatoes, cut in strips
2 tbsp olive oil
Salt and pepper
For the sauce :
1 shallot, finely chopped
3 tbsp butter
1 clove garlic, minced
3 tbsp flour
250 ml beef concentrate
250 ml chicken concentrate
1 tbsp cornstarch
1 tbsp water
1 tsp Worcestershire sauce
1 tbsp cornstarch
1 tbsp water
Cheese curds
Green onion, finely chopped
Preparation :
Preheat oven to 400°F.
Soak potatoes in water for 15 minutes and drain.
In a bowl, coat potatoes with oil, salt and pepper and place on a baking sheet lined with parchment paper.
Bake for about 25 minutes, turning over halfway through cooking and keeping warm.
For the sauce, sauté the shallot with the butter for 2 to 3 minutes.
Add the garlic, then sprinkle the flour and stir well for about 3 to 5 minutes, until the butter is lightly browned.
Add both broths and Worcestershire sauce and bring to a boil.
Dilute cornstarch with water in a small bowl and add to mixture.
Simmer for 5 to 8 minutes until thickened.
Strain the sauce to remove the shallot pieces.
Serve fries on a plate with cheese curls and top with sauce.
You can add chopped green shallots.
