Super Bowl pretzels with cheese sauce

Preparation : 2 hours including dough resting time

Servings : 6 large pretzels

Ingredients :

Pretzels :
1 cup hot water
1 packet instant yeast

2 tbsp sugar
1 tsp salt
2¾ cups flour
2 tbsp vegetable oil
10 cups water
¼ cup baking soda
1 egg
½ tbsp water
Corse sea salt

Sauce :
2 tbsp butter
1 clove garlic
1½ tbsp flour
1½ cup milk
¼ tsp Dijon mustard
1 tsp paprika
Pinch salt and pepper
1 cup cheese curds, cut into very small pieces
¼ cup parmesan

Preparation :

Pretzel preparation :
Put the hot water in a bowl and add the yeast, sugar and salt and mix well.
Let stand for 5 minutes.
Gradually add the flour and mix with hands until dough forms and knead for about 5 minutes until it is no longer sticky.
Place the dough in a lightly oiled bowl and cover with a damp cloth.
Let rest for 1 hour.
Preheat oven to 450°F.
On a work surface, with a pizza roller, divide the dough into 6 equal balls.
Take one ball at a time and form a long roll of about 60 cm.
Cut the roll into 3 12-centimetre segments, 2 5-centimetre segments, and 3 3 centimetres segments.
Make the outline of the balloon and the centre with the 3 longest pieces and press the ends well, use the 2 5-centimetre segments to make the bands at the end of the balloon and the 3 small segments for the laces of the balloon.
Boil water with baking soda over medium heat.
Carefully place the pretzels one at a time into the water for about 10 seconds until they puff up slightly, drain well and place on a cookie sheet (if the pieces detach in the water, just stick them back once on the sheet).
Repeat with the remaining dough pieces.
Mix egg and water and brush on pretzels, then sprinkle with coarse sea salt.
Bake for about 15 minutes.

Cheese curd sauce :
In a saucepan, over medium heat, melt the butter, add the garlic and cook for 1 minute.
Add the flour and mix well, then pour in the milk while whisking.
Add the mustard, paprika, salt and pepper and mix well.
Add the cheese and mix well until the cheese melts.
Add the parmesan cheese and simmer over low heat until thickened.
Add milk if necessary.

Serve hot sauce with pretzels.
