Crepe with tomato and spreadable goat cheese

**Ingredients: 8 servings

Crepes :
* 3 eggs
* 1 ¼ cups of milk
* 1 cup of flour
* 3 tbsp. melted butter
* ¼ tsp salt

Topping :
* 1 spreadable goat cheese plain
* 8 small tomatoes, sliced
* ¼ cup chopped basil leaves
* Balsamic vinegar reduction coulis

Preparation:
Step 1 : In a blender, mix eggs, flour, melted butter and salt until smooth
Step 2 : Heat a frying pan (about 8 pc) and pour 30 ml of crepe batter into the pan and tilt it to cover the bottom well. Cook for about 1 minute, flip and cook for 30 seconds. Repeat the process until you have done all your crepe
Step 3 : Spread the goat cheese, tomatoes, basil leaves and balsamic vinegar coulis on top and close the pancakes. Serve warm.
